高崎明さんの著書「街かどのパフォーマンス」（太郎次郎社）のなかに、次のような記載がある。
「ぼくにもはっきりした展望があったわけではなく、ほんまにどうなっちゃうんだろうという感じだったのだが、それを不安に思うよりも、むしろ、だからおもしろいと思っていた。予定されたことが予定どおりいっても、それはあたりまえのことであっておもしろくもなんともない。どうなっちゃうかわからないという未知の部分があるからこそ、人は未来に胸ときめかすのだろうし、それへ向けてしんけんになって生きることができるのだとぼくは思う。」
これは、障害のある子どもたちとワークショップを通じて１つのお芝居をつくる取り組みについて書かれたものだ。台本に従ってつくるのではなく、みんなで創作していくお芝居に絡めて、高崎さんの価値観が示されている。
お芝居をつくることと、パン屋をつくることは、まったく異なる分野にある。
しかし、「ぷかぷか」を追いかけるなかで、私が見聞きした高崎さんの言動を振り返ると、面白さを追求する姿勢に変わりはないと思う。
３月２７日（土）は、工事中の「ぷかぷか」の店舗で、壁を塗るイベントが催された。
お店の入り口右手の壁には、四角い枠が用意されており、そこにみんなで漆喰（しっくい）を塗る作業だ。
参加者はビニールの手袋をはめて、漆喰を野球のボールのように取る。そして、それを壁に向けて放り投げる。漆喰は、べちゃっと壁に付いて小さな山になったり、重力に引かれて少し下に流れたものもあった。壁を塗るというより、どろんこ遊びの延長に近く、みんなでわいわいと投げつけた。漆喰が乾いて固まり、最終的にどんな壁が完成するのかが楽しみだ。
ほんの１週間ほど前
「ぷかぷか」の店舗は、スタッフがゆっくり休憩する場所を確保できない。パンをつくり、販売するスペースでいっぱいになってしまう。
高崎さんは「ぷかぷか」のお店の近くに部屋を借りて、そこをスタッフの休憩室にするつもりでいたのだが、予定していた空き部屋は「住居」以外の目的で借りることができない決まりがあることが分かった。
「住居」として借りて使うことができないわけではないだろうが、複数の人が出入りすることもあり、近隣の住人とのトラブルが出るとお店の不評にもつながる可能性がある。このため、お店近くの空き部屋を借りることは諦めて、別に賃貸物件を探していた。
そんななか、「ぷかぷか」から徒歩で行ける場所で営業していたレストランが、今月で閉店することが分かった。高崎さんがレストランのオーナーと話しをしたところ、閉店して中にある設備を解体するにもそれなりにお金が掛かるので、次にその場所を借りるなら、それを格安で譲ってくれるという話が持ち上がった。
一般的な部屋では、休憩以外の目的に使うことは難しい。
「ぷかぷか」のカフェのスペースは４席しかないが、レストランのような設備が付いた場であれば、そこにお客さんを呼ぶこともできる。高崎さんは、閉店するレストランの場所を借りることに決めた。

パン屋として、どの程度のパンをつくることができ、どの程度のパンが売れるのかは、始まってみないと分からない。パン屋と平行してレストランも稼動することに伴う、スタッフの配置や作業工程、資金繰りなどが気になってくる。

「分からない」という未知の部分に胸ときめかし、希望にできるだろうか。そんなことを考えてみる。
