カフェ＆ベーカリー「ぷかぷか」の開店に向けた準備として、高崎さんは、月１回、パン教室を開いている。会場は、横浜市の中山地区センター（ハーモニーみどり）の調理室。１月24日に開催したパン教室は、第１７回を数えた。
この日の参加者は、障害者６人（高校生も含む）や保護者、「ぷかぷか」で働く予定のスタッフなど約25人が集まった。
今回のメニューは、カレーパン、焼きアンパン、鍋焼きパン。カレーパンはこれまで焼きカレーパンを作っていたが、はじめて、揚げたカレーパンに挑戦した。
高崎さんが、あるパン屋さんで聞いてきたところ、「焼き」よりも「揚げ」のカレーパンのほうが売れるらしい。お客さんの年齢層にもよるが、男性のお客さんは「揚げ」のカレーパンを好む傾向があるようだ。
パンづくりは、傍らから眺めているだけでも、とても楽しい。
生地を混ぜたり、こねたり、形をつくっていく作業そのものが楽しいし、「これが美味しいパンになるんだ」とワクワクした気持ちを膨らませながら進めることができる。
生地が発酵したり、オーブンの中で膨らんでいく過程も見ていて飽きない。
焼きあがった時の香ばしいかおりはなんともいえないし、オーブンを開けて焼きあがりを見る時の感動もある。
「ぷかぷか」準備のパン教室でつくるカレーパンは、まず、カレーの具となる野菜を細かく切り、炒めてカレー味をつける。出来上がったカレーのあんは、冷ましてから、パン１個に入れる分量ごとに丸くまとめる。パン生地をつくり、１個分ごとに分割。こんどは、カレーパン１個分の生地を伸ばして、カレーのあんを１つずつ包み、水にくぐらせてからパン粉の衣をつけて揚げる。
簡単にまとめてしまったが、パンの中身になるカレーあんは味の調整が難しい。
材料や作り方によって、やや水分が多かったり、味にパンチがなかったりする。
カレーパンやアンパンなど、中身が入ったパンの場合、パン生地にあんを入れた後にきちんと閉じていないと焼いたり、揚げたりした時に、あんが生地からはみ出してしまう。
自宅で手作りして楽しむパンであれば、多少見栄えが悪くても問題はない。むしろ、形や出来栄えがふぞろいなことも、それぞれの家庭の「味」になるだろう。
しかし、「ぷかぷか」では、パンを「商品」として、お客さんにお金を出して買っていただかなくてはならない。カレーがはみだしたカレーパンを店頭に並べるわけにはいかない。
この日のパン教室の途中、高崎さんは、「ぷかぷか」でスタッフとして働く予定の参加者に向けて、「みんなで稼がないといけないんですよ」という話した。
これまでに何回かパン教室に足を運んできたが、パンづくりの練習や修行というよりも、「みんなで楽しくパンをつくる」という雰囲気で占められていた。この日のパン教室の様子をみても、参加したみんなでバタバタしながら、パンを作っている。あくまで趣味レベルのパンづくりだと思う。スタッフの役割分担が整理されているとはいえないし、パンづくりの作業が効率的に進められているともいえない状態だ。
高崎さんの口から「働いて稼ぐ」という話が出てきたのは、いよいよ開店の時期が迫っており、高崎さんの中で、「商品をつくる」「稼ぐ」という課題について、「なんとかしなければいけない」という思いが強くなってきたからなのかもしれない。
障害のある人も、ない人も、パンづくりのような楽しい作業を一緒にできたら、「今日は楽しかったね」という思いを共有できると思う。楽しみながら作りあげたものを、お客さんに喜んで買ってもらうことができたら、さらに嬉しいだろう。お金もいただくことができたら、自分たちの作ったものに自信が持てるし、「明日も頑張ろう」と思える。
しかし、「商品」のパンを作るには、一定の品質が求められる。他のお店のパンと、味や価格の競争にさらされる。収益を上げるために売り上げの目標があれば、それに見合う数を製造したり、販売できなければならない。効率性や生産性を求められる部分が、どうしてもでてくる。
「ぷかぷか」で働く予定の障害者の中には、野菜を切る、お皿を洗うなどの作業をある程度こなせる人もいるが、パンをつくる過程で「これを、こうしてください」とお願いしても、そのとおりにすることができず、パン生地とあんがグチャグチャになってしまう人もいる。
そういう人も受け入れながら、一定の量や質の商品をつくり、それを販売して収益をあげなくてはならない。さまざまな課題を同時進行的にクリアしていかなければ、経営を維持していけない。それはあまりに荒業のような気がして、私は、想像するだけで息が詰まりそうな気持ちになる。
「カフェ＆ベーカリーぷかぷか」は、立ち上げ、存続していく、道すじをきちんとつけていけるのだろうか？
一言で言えば「福祉と経営の両立」だが、これは一筋縄ではいかない、とても難しいテーマだと考えている。
